Ingredients
  

Tortillas

  • 8 mini soft corn tortillas (can be substituted with flour tortillas)

Chicken marinade

  • 4 chicken thighs, cut into bite-sized pieces (or 3 chicken breasts)
  • 1 tbsp chili powder (use 1 tsp for a milder taste)
  • 1 tsp ground cumin
  • 1 tsp ground black pepper
  • 1 tsp garlic powder
  • 2 tbsp lime juice (about 1 whole lime)
  • tsp salt (add to taste)

Toppings

  • 1 large onion (finely chopped)
  • ½ cup cilantro (finely chopped)
  • 1 large avocado (cut into small cubes)
  • ½ cup red cabbage (thinly shredded)
  • 1 lime (cut into 4 wedges)

Spicy mayo sauce

  • cup mayonnaise
  • 1 tsp red chili powder (use ½ tsp for a milder taste)
  • ½ tsp ground black pepper
  • ½ tsp garlic powder
  • salt (add to taste)

Instructions
 

  • Add all the ingredients under the Chicken marinade section to a bowl. Mix well with the chicken to coat evenly.
  • In a large skillet or pan, cook the chicken on high heat. Stir occasionally until slightly charred. Typically takes 4-5 minutes. Keep the cooked chicken aside.
  • Heat up the corn tortillas on a hot pan or a griddle for 15 seconds on each side.
  • Add all the Spicy mayo ingredients in a bowl and mix well.
  • To prepare your taco, first spread a thin layer of the spicy mayo on the tortilla. Then add about ⅓ cup of cooked chicken. Top it with some onions, avocado, red cabbage & cilantro. Squeeze a few drops of lime juice on the tacos.
